Louis Latzer (1848-1924) was educated in the local Highland public schools. Mr. Latzer attended both McKendree College and Illinois Industrial University. He was a dairy farmer, chemist, and bacteriologist a unique combination that led to the development of unsweetened evaporated, sterilized milk. In 1885 Mr. Latzer became a director and investor in the Helvetia Milk Company and later served as its president. Louis Latzer then started the Pet Milk Company, which allowed his condensed milk products to be distributed nationally and internationally. Louis Latzer was very much a "behind the scenes" philanthropist in not seeking or wanting recognition for his philanthropic efforts. He was especially generous in helping young people further their education. His widow and family established the Louis Latzer Memorial Library of Highland, dedicated in 1929 as a memorial to him and a gift to the community.
